Five Fast (Egg-Free) Breakfasts When You Have No Time

When I wake up in the morning around six and head into the kitchen, the last thing I feel like doing before leaving the house is frying some eggs or whipping up a batch of banana pancakes. In fact, I much prefer the Two Step Method:

  1. Open fridge.
  2. Take out my already prepared breakfast.

Early on, the most time I want to spend over the stove is waiting for my coffee to finish brewing. Teens especially don’t always have a lot of time to prepare breakfast in the morning before heading to class or morning practices. Below are five delicious, easy and egg-free breakfasts that can be prepared in advance to bring mornings some ease.

Banana Bread Overnight Oats

  • 1/2 cup oats
  • 1/2 cup milk
  • 1/2 banana, mashed
  • 1/4 cup Greek yogurt
  • 1/2 tbsp. nut butter
  • Pinch cinnamon
  • 1 tbsp. chia seeds

How To:

  • Add oats, milk, and mashed banana to a container and mix.
  • In a separate bowl combine vanilla, nut butter, chia seeds, yogurt, and cinnamon.
  • Layer yogurt over the oats and leave in the fridge overnight to set.

Serves: 1

Carrot Cake Baked Oats

  • 2 ripe bananas
  • 2 cups oats
  • 1/4 cup protein powder
  • 1 tsp baking powder
  • 1 and 1/2 cups milk
  • 2 tbsp. liquid sweetener (maple syrup, stevia, or powdered sugar-free substitute)
  • 1 tsp cinnamon
  • 1 carrot (grated)
  • Crushed walnuts (optional)

How To:

  • Preheat oven to 180C/ 350F.
  • Mash bananas and mix with remaining ingredients.
  • Pour mixture into an oven-safe dish.
  • Bake for 35-40 minutes or until golden.
  • Slice and store to eat the next day.

Serves: 4

Can sub fave protein powder for regular flour.

Healthier Rice Krispies Bars

  • 1/2 cup natural peanut butter
  • 1/2 cup honey or maple syrup
  • 3 cups Rice Krispies or similar cereal
  • 1/4 cup protein powder, chocolate or vanilla flavored

How To:

  • Mix peanut butter and syrup or honey in a bowl.
  • Add Rice Krispies and protein powder, then mix.
  • Spread mixture into a parchment lined pan or container and press flat.
  • Optional, top with melted chocolate and flaky sea salt.
  • Place in fridge overnight to set.

Serves: 12

Cottage Cheese Bowl

  • 1/2 — 1 cup cottage cheese
  • Berries of choice
  • 1 tbsp. honey
  • 2 tbsp. vanilla protein powder
  • Pinch of sea salt
  • 1/2 banana

How To:

  • Combine all ingredients except banana in a container or jar.
  • Top mixture with sliced banana.
  • Store overnight for better flavor or eat immediately.

Serves: 1

Nutty Banana Yogurt Bites

  • 1 cup Greek yogurt
  • 1 banana
  • 1/2 cup walnuts, chopped
  • 1/4 cup vanilla protein powder

How To:

  • In a bowl, mix all ingredients until combined.
  • On a tray lined with parchment paper scoop equally sized servings of mixture and form round, cookie-like shapes.
  • Freeze overnight and enjoy.

Serves: 4-6 depending on size of yogurt rounds

All five of these healthy, easy to prepare breakfasts are guarenteed to nourish the start of your day. The next time you wake up and waltz into the kitchen, hopefully one of these treats will be waiting patiently to be devoured. I know I'm excited to enjoy one of them tomorrow.
