1. Black Tea Peach Creamsicles

Summer is so vibrant, but SO hot, so I am always in need of a cold, refreshing treat! A sweet, frozen treat will never fail at cooling me off. I love enjoying these Black Tea Peach Creamsicles at the beach, or reading a book by the pool. In my opinion, homemade recipes are always the best, so here is a simple recipe for these yummy treats:

Ingredients:

  • 1 ½ cups boiling water
  • 2 black tea bags
  • 1 fresh ripe peach (cut into 1-cup chunks)
  • ½ cup plain Greek yogurt
  • ¼ cup heavy cream
  • 3 tablespoons honey

Preparation:

1. Combine the boiling water and tea bags. Steep for 15 minutes and then slowly pour about 2 ounces of tea into six popsicle molds. Add a few peach chunks into the mold and transfer to the freezer.

2. Once the “tea” layer is completely frozen, it's time to make the second layer (cream base)! Combine the yogurt, heavy cream, and honey and pour the cream base over the frozen tea layer.

3. Unmold each popsicle from the mold and serve it immediately.

Tip: Before unmolding the creamsicles from the mold, dip them in a glass of boiling water to make the unmolding process easier!

Nothing beats a cool, refreshing treat! This sweet and light dessert captures the juicy, sweet flavor of ripe peaches in a refreshing, icy form that is simple to make. This homemade peach sorbet will cool you down on a hot summer day and cleanse your palate! This recipe only takes three ingredients, and it is vegan:

  • 3 cups frozen peaches
  • 1 lemon (juiced)

1. Add the peaches, lemon juice, and honey to a blender

2. Transfer to a container and freeze for 6 hours, until set

4. Classic peach cobbler

While cold, refreshing peach recipes are delicious, I also love a warm peach cobbler with cold vanilla ice cream on top! The best part of a classic peach cobbler is that you can make it all year round, as it can be prepared with either fresh or canned peaches.

Ingredients:

  • 4 fresh peaches (peeled, pitted, and sliced)
  • ¾ cup granulated sugar
  • ¼ teaspoon salt
  • Batter
  • 6 tablespoons butter
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking soda
  • ¼ teaspoon salt
  • ¾ cup milk
  • Pinch of ground cinnamon

Preparation:

1. Stir sliced peaches, sugar, and salt in a saucepan.

2. Cook on medium heat until the sugar is dissolved (for a few minutes)

3. Preheat the oven to 350 degrees F. Slice the butter into pieces and add it to a 9x13-inch baking dish.

Place the pan in the oven while it preheats, to allow the butter to melt. Once melted, remove the pan from the oven.

4. Mix the sugar, flour, baking soda, and salt into a large bowl. Stir in the milk until combined.

5. Pour the mixture into the pan (over the melted butter)

6. Spoon the peach mixture over the batter and sprinkle cinnamon over the top

7. Bake at 350°F for about 35-40 minutes, then serve warm with a scoop of vanilla ice cream.

Tip: The easiest way to peel peaches is to drop a few into boiling water for around 30 seconds, then place them in an ice bath.

Last but not least, a refreshing beverage is just what you need to cool down on a hot day! While using peaches in desserts and salads are delicious, there are also various ways to incorporate peaches into fun beverages! I love this recipe to quench my summer thirst:

Ingredients:

  • 3 large peaches (pitted and cut into small chunks)
  • ½ cup sugar
  • 1 cup lemon juice
  • Water

Preparation:

1. Combine the fresh peaches, water, and sugar into a medium saucepan. Cook until boiling over medium heat. Then reduce to low heat and simmer for 5 minutes. Let the mixture cool

2. Place the mixture into a blender and blend until smooth. Pour peach syrup through sieve over a 2 qt pitcher

3. Add fresh lemon juice and fill to 2 qt lines with water and ice. That's it! Enjoy!
