1. Homemade Watermelon Popsicles

There is no better feeling than enjoying a refreshing homemade popsicle on a hot summer day. Personally, my go-to is always watermelon, and I’m surprised how underrated it is. Plus, this recipe only contains natural sugar and no high-fructose corn syrup! Here is a super-easy recipe for these delicious popsicles:

Ingredients:

  • 2 cups watermelon
  • ½ tablespoon fresh mint leaves
  • 1 cup coconut water
  • 1 ½ tablespoons lime juice
  • 1 tablespoon honey

Preparation:

  1. In a blender, blend ALL ingredients
  2. Pour the mixture into a popsicle mold and insert a popsicle stick
  3. Freeze overnight and serve!

Tip: Before unmolding the popsicle from the mold, dip it in a glass of boiling water to make the unmolding process easier!

2. S’more Cheesecake Pops

Some of my favorite memories come from summer camp. I love all the activities and spending time with friends, but most of all, I love sitting by the campfire, singing, and eating s’mores. This unique twist on a classic camping treat is not only delicious, but it is also a perfect frozen dessert to keep you cool! Here is the recipe:

Ingredients:

  • 1 (8oz) brick cream cheese
  • ¼ cup sour cream
  • ½ cup powdered sugar
  • ½ cup almond milk
  • ¼ teaspoon vanilla extract
  • ½ cup mini marshmallows
  • ⅓ cup chocolate chips
  • 9 graham crackers
  • 3 tablespoons melted butter

Preparation:

  1. Blend sour cream, cream cheese, powdered sugar, vanilla extract, and almond milk in a food processor until well combined
  2. Mix mini marshmallows and chocolate chips into the mixture by hand
  3. Pour mixture into mold and leave a little space on top (about ½ inch)
  4. Process graham crackers into fine crumbs and add melted butter to the cracker mixture
  5. Add the crust mixture on top of the cheesecake and press down to compact it
  6. Freeze for at least 5 hours and serve!

  2. Add Lemonade and stir to combine
