There is no better feeling than enjoying a refreshing homemade popsicle on a hot summer day. Personally, my go-to is always watermelon, and I’m surprised how underrated it is. Plus, this recipe only contains natural sugar and no high-fructose corn syrup! Here is a super-easy recipe for these delicious popsicles:
Ingredients:
- 2 cups watermelon
- ½ tablespoon fresh mint leaves
- 1 cup coconut water
- 1 ½ tablespoons lime juice
- 1 tablespoon honey
Preparation:
- In a blender, blend ALL ingredients
- Pour the mixture into a popsicle mold and insert a popsicle stick
- Freeze overnight and serve!
Tip: Before unmolding the popsicle from the mold, dip it in a glass of boiling water to make the unmolding process easier!

2. S’more Cheesecake Pops
Some of my favorite memories come from summer camp. I love all the activities and spending time with friends, but most of all, I love sitting by the campfire, singing, and eating s’mores. This unique twist on a classic camping treat is not only delicious, but it is also a perfect frozen dessert to keep you cool! Here is the recipe:
Ingredients:
- 1 (8oz) brick cream cheese
- ¼ cup sour cream
- ½ cup powdered sugar
- ½ cup almond milk
- ¼ teaspoon vanilla extract
- ½ cup mini marshmallows
- ⅓ cup chocolate chips
- 9 graham crackers
- 3 tablespoons melted butter
Preparation:
- Blend sour cream, cream cheese, powdered sugar, vanilla extract, and almond milk in a food processor until well combined
- Mix mini marshmallows and chocolate chips into the mixture by hand
- Pour mixture into mold and leave a little space on top (about ½ inch)
- Process graham crackers into fine crumbs and add melted butter to the cracker mixture
- Add the crust mixture on top of the cheesecake and press down to compact it
- Freeze for at least 5 hours and serve!
Tip: If you don’t have a popsicle mold, that’s okay! You can also use paper cups!

3. Blueberry-Lemon Mocktail
While I love desserts and snacks, making fun drinks over the summer is so fun! Most drinks are so easy to make, so you can definitely tweak this recipe by adding your favorite fruits! I love lemonade and my favorite fruit is blueberries, so this mocktail is something I make regularly! Here is a quick recipe for a refreshing drink:
Ingredients:
- 1 cup blueberries
- 2 tablespoons honey
- ¼ cup mixed fresh herbs (I suggest basil and mint)
- 2 bottles (32 oz) lemonade
- 1 cup sparkling water
Preparation:
- Mash blueberries and herbs together in a large bowl
- Add Lemonade and stir to combine
- Refrigerate for 3 hours, then serve over ice and add sparkling water!
Tip: You can substitute the honey with agave nectar or sugar!

4. Hwache
I know we've all seen that TikTok trend, but I didn’t expect this dessert to taste so delicious. It’s refreshing, and it's both a drink and a dessert! It’s perfect for a warm day, and it is endlessly customizable. There are no specific measurements, so just do the amount you desire! Here is the recipe for this refreshing treat:
Ingredients:
- Watermelon
- Fresh berries (Strawberries and blueberries are my favorite)
- Fruit jelly or Nata de Coco
- Strawberry milk
- Carbonated drink (I usually use Sprite)
- Ice cubes
Preparation:
- Cut all fruits and place them in a large bowl
- Pour strawberry milk and soft drink into the bowl
- Add a few ice cubes, and you are done!
- Serve immediately!
Tip: You can customize every single part of this recipe! Choose what you love best!

5. Homemade Mango Sorbet
I don’t know about you, but I think refreshing fruit sorbets are even more delicious than creamy chocolate ice cream. Also, it's much simpler to make at home! Here is a quick recipe for a cold treat:
Ingredients:
- 16 ounces frozen mango
- ½ cup simple syrup
- 1 tablespoon lemon juice
Preparation:
- Place frozen mangoes, lemon juice, and simple syrup in a blender. Blend until smooth.
- Transfer to a freezer-safe container, freeze for 2 hours, and enjoy!
Tip: After taking your sorbet out of the freezer, let it thaw for 5 minutes at room temperature before serving!
