It is finally fall, which means the baking season is here! With the weather getting colder and the daylight getting shorter it's only fitting to start the season off with these simple yet fun baking recipes to share with family, friends, or yourself.

Apply NowThe Classic Apple Pie

Ingredients:
- Homemade Pie Crust or Store-bought
- 1o cups ¼-inch thick apple slices: A variety of them works best
- ¼ teaspoon each: Nutmeg & ground allspice
- 1 and ½ teaspoons: Ground Cinnamon
- 1 Tablespoon Lemon Juice
- ½ Cup Granulated Sugar
- ¼ Cup All-purpose Flour
- optional: coarse sugar for sprinkling onto the crust
Recipe:
Crust: Prep pie crust either homemade or store-bought
The Filling: Combine apple slices, sugar, flour, lemon juice, cinnamon, allspice, and nutmeg together in a large mixing bowl; stir gently.
Oven: Preheat oven to 400°F (204°C)
The Dough: Roll out a disc of chilled pie dough on a floured surface(you should have two, one for the base and one for the top) and carefully place it in a 9-inch pie dish that is 1.5 to 2 inches deep. Make sure the dough is smoothing by tucking it in with your fingers.
Assembly: Pour filling into the pie crust bowl. Take the second disk of dough and roll it into a circle. Take a sharp knife or pastry wheel and cut 12 1-inch strips.
Threading: Thread the strips over and under each other and smooth the edges down. Brush the top pie crust with egg wash and sprinkle coarse sugar (optional)
Baking pt1: Place pie on a baking sheet for 25 minutes and reduce temperature to 375°F (190°C) continue to bake for 35-40 minutes more.
Baking pt.2: Remove pie from oven, cool, and enjoy!

Banana Bread

Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- ¼ teaspoon salt
- ½ teaspoon ground cinnamon
- ½ cup unsalted butter-softened
- ¾ cup packed light or dark brown sugar
- 2 large eggs, room temperature
- ⅓ plain yogurt or sour cream, room temperature
- 2 cups mashed bananas
- 1 teaspoon pure vanilla extract
- Optional: ¾ cups of chopped pecans or walnuts
Recipe:
Making the batter: Whisk flour, baking soda, salt, and cinnamon together in a medium bowl.
In a separate bowl, beat butter and brown sugar on high until creamy; add eggs, yogurt, mashed bananas, and vanilla extract.
Combining ingredients: With the mixer on low speed, add your dry ingredients to the wet ingredients. Add nuts, if using in the recipe.
Baking: Pour batter into baking pan and bake for 60-65mins. Check bread every 5 minutes.
Cooling: Remove bread from oven and let cool for 1 hour.

Cinnamon Rolls

Recipe:
- 2 and ¾ all-purpose flour
- ¼ cup granulated sugar
- ½ teaspoon salt
- ¾ cup whole milk
- 3 tablespoons unsalted butter
- 2 and ¼ teaspoon instant yeast (1 standard packet)
- 1 large egg
Filling
- 3 tablespoons unsalted butter
- ⅓ cup packed light or dark brown sugar
- 1 tablespoon ground cinnamon
Icing
- 4 ounces full-fat block cream cheese
- 2 tablespoons unsalted butter
- ⅔ cup confectioners' sugar
- 1 teaspoon pure vanilla extract
The Dough: Whisk flour, sugar, and salt in a large bowl.
In a heatproof bowl, combine milk and butter; microwave or use the stove to heat butter until melted and the mixture is warm. Whisk in yeast and pour into the dry mixture. Add the egg and stir until soft dough forms.
Knead dough on a lightly floured surface for 3-5 mins. Let dough rest for 10 mins.
Filling the rolls: Roll the dough out in a 14x8-inch rectangle. Spread the filling onto the dough and roll it into a log. Cut into 10-12 rolls and place in a lightly greased pan.
Rising: Cover pan with aluminum foil, plastic wrap, or a clean kitchen towel allowing the rolls to rise for 60-90 mins.
Baking: Preheat oven to 375°F and bake for 24-27 mins.
Icing: Beat the cream cheese, butter, confectioners' sugar, and vanilla in a medium-sized bowl. Spread icing over cinnamon rolls and enjoy!

Peach Pie

Ingredients:
- Homemade pie crust or Butter Pie Crust
- 8-9 medium-sized peaches
- ⅔ granulated sugar
- ½ cup all-purpose flour
- 1 tablespoon fresh lemon juice
- 1-2 teaspoons peeled minced ginger-optional
- 1 teaspoon ground cinnamon
- 2 tablespoons cold unsalted butter cut into small cubes
- egg wash: 1 large egg beaten with 1 tablespoon milk
Recipe:
The Crust: Roll out one disc of chilled pie dough on a floured work surface; you should have a circle that is 12 inches in diameter. Place dough into 9-inch round pie dish
Filling: Stir peeled peach chunks, granulated sugar, flour, lemon juice, ginger, and cinnamon together, then pour the filling into the pie dish.
The Lattice: Roll out the second disc of pie dough in a circle and cut 6 2-inch-wide strips. Thread the strips over and under and tuck the excess dough under.
Baking: Lightly brush the top of the pie crust with egg wash. Preheat oven to 425°F for 20 minutes then reduce oven down to 375°F. Place a pie crust shield over the pie dish and continue to bake for 45-50 more minutes.
Take the pie out of the oven, let it cool, and enjoy!

Apple Turnovers

Ingredients:
Dough:
- 1lb of homemade or store-bought frozen and thawed puff pastry.
Filling:
- 2 cups peeled & diced apples
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon
- ½ cup granulated or brown sugar
Egg wash + Topping
- 1 large egg
- 1 tablespoon milk
- optional: ½ cup salted caramel
Recipe:
Filling: In a medium saucepan over medium heat, combine apples, cornstarch, cinnamon, vanilla, and sugar. Stir constantly for 5 minutes and reduce to low heat and let simmer for 5 minutes. Remove from heat and cool.
Shaping the Dough: Line a large baking sheet with parchment paper and set aside. Take the dough and cut it into 4 squares.
Filling: Using a spoon, pour 2-3 tablespoons of apple filling onto the center of each square. Fold corners to make a triangle and crimp edges with a fork to seal.
Chilling: Chill turnover in refrigerator for 15 minutes and preheat oven to 400°F.
Egg wash: Whisk egg and milk together and brush egg wash on turnovers. Cut 2 or 3 small vents in the turnovers.
Bake: Bake turnovers for 23-25 mins.
Cool turnovers for 5mins and drizzle caramel sauce (optional).

Pumpkin Pie

Ingredients:
- Homemade pie dough or frozen pie dough
- egg wash: 1 large egg beaten with 1 tablespoon milk
- one 15-ounce can of pumpkin puree
- 3 large eggs
- 1 and ¼ cups of packed light or dark sugar
- 1 tablespoon cornstarch
- ½ teaspoon salt
- 1 and ½ teaspoons ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/8 teaspoon black pepper
- 1 cup heavy cream
- ¼ cup milk
Recipe
Filling: Whisk the pumpkin puree, three eggs, and brown sugar. Add cornstarch, salt, cinnamon, ginger, nutmeg, cloves, pepper, heavy cream, and milk. Whisk until combined.
Dough: Roll dough into a 12-inch circle and place in a deep dish pie dish.
Assembly: Pour filling into the pie dish and bake for 55-60 mins at 375℉.
Let cool for at least 3 hours before serving.
