3) Dinner: Homemade Hamburger Helper

Mhmmm.. a delicious dinner for a hungry, hungry teenager. Skinny Taste has the recipe for you!

Ingredients:

  • 3/4 pound of 93% lean beef
  • 1/2 teaspoon kosher salt
  • 1/2 cup of onion, chopped
  • 4 cloves of garlic, chopped
  • 1/4 teaspoon of paprika
  • 1/4 cup of tomato sauce or puree
  • 2 cups of Worcestershire Sauce
  • 2 cups of chicken broth
  • 3/4 cups of 2% milk, or dairy-free for DF
  • 8 ounces of dry pasta, such as cavatappi, rotini elbows small shells, or gluten-free pasta if needed.
  • 1 cup part-skim sharp cheddar cheese, or dairy-free cheese for DF

Instructions:

  1. Start by heating a big skillet on medium-high heat. Throw in the beef with a little bit of salt and paprika. Cook it for about 5 to 6 minutes while breaking it into small pieces until it’s nice and brown. Then, toss in some chopped onion and garlic and cook those for 2 to 3 minutes until they smell really good
  2. Next, add in the tomato sauce and Worcestershire sauce. Let it cook down until it gets thick and sticky for about 2 to 3 minutes. After that, pour in the chicken broth and pasta, and bring it to a boil. Then, turn the heat down to medium-low, cover it, and let it cook for about 8 to 10 minutes. Make sure to stir it halfway through so the pasta doesn’t stick, and it should be almost tender with most of the liquid soaked up.
  3. Once that’s done, take off the lid, toss in some milk, and keep cooking it with the lid on, stirring now and then on medium-low until the pasta is just right and most of the liquid is gone. This should take another 8 to 10 minutes.

Finally, take it off the heat, uncover it, and mix in some cheddar cheese until it’s all melty and delicious! Enjoy your meal!
